The invention relates to a method of making an andouillette square made up, inter alia, of intestines, preferably of pork, and of a pork rind stuffing. The method according to the invention is characterised in that a tin (mould) is filled with flat and parallel layers of intestines, the said intestines having been previously cooked and mixed with the pork rind stuffing, in that it is shaped in the tin by pressing, and in that the assembly is chilled with a view to removing it from the tin after having optionally recooked it.
