PURPOSE: To provide a method for synthetically effectively controlling the growth of gram-negative bacteria such as Salmonella typhimurium with lantinonine bacteriocin including nisin and other synergists. CONSTITUTION: There is disclosed a method for inhibiting the growth of undesired gram-negative bacteria with lanthionine bacteriocin in combination with a substance selected from amino acids such as glycine, 1-8C aliphatic mono-or-di- carboxylic acids such as lactic acid and propionic acid, sorbic acid and their salts as a synergist for the lanthionine bacteriocin.
