METHOD FOR THE PREPARATION OF MAIZE WHISKY DESTILLATE

This method ensures a reduced number of operations and energy losses, using as raw material the residue from another production.Description : the starting material, which is corn hydrolysate (hydrol) from the production of crystalline glucose, is dissolved in water. The mixture is subject to fumigation of partial turf and oak-timber burning in proportion of 4:1 +- 5%. The fumigated blend is leavened with selected yeast of Sacch cerevisiae strain G. The fermentation is carried out at temperatures between 16 and 24 degrees C. Double distillation is carried out. The ageing of the distillate is carried out in an oak barrel in the presence of micronized timber with a size between 150 and 200 microns, with 1.0 to 1.2 g/l of dry substance.
