Stackable and reversible tray for the manufacture of cheese.

This tray (1) can be used with other similar trays to mechanise the manufacture of cheeses by stacking comprising moulding blocks (8) and removable panels (12, 13).
<??>In a stack, the rigid frame of the tray (1) supports the tray immediately above (17) and the trays are nested around the moulding blocks (8). The two faces of the tray (1) can be used in the same way and the stacking can be turned over without unstacking during maturing of the cheeses. The frame is equipped with openings (5) making it possible to ventilate and to let through the pickling brine during draining, salting and maturing.
