The invention relates to a process for the treatment of black tea leaves which comprises placing the moistened black tea leaves at a high temperature at a pressure above the vapour pressure of water at a high temperature in contact with an oxidizing agent which provides a sufficient quantity of molecular oxygen to oxidize the polyphenol components contained in the moistened leaves.
