PURPOSE:To form a jelly having a refreshing feeling, by separating a material into an alkaline and an acidic systems, keeping one of the systems under such a condition as to be slightly insoluble in filling and then metable by heating thereafer, mixing the two systems, and heating the systems to liberate gaseous carbon dioxide. CONSTITUTION:A material is separated into an alkaline system containing a carbonate and an acidic system containing an organic acid and fruit juice. The systems are then treated as follows: (A) one of the systems is gelatinized and diced or the gel is dried, pulverized and added to the other system. (B) The system is previously introduced into a container and gelatinized, and the other system is injected into the system and filled. (C) The system is pelletized by the conventinal method and added to the other system. (D) The system is injected into a hot-melt capsule and added to the other system. The resultant mixture is sealed and heated to generate gaseous carbon dioxide, cooled and gelatinized. Thus, a soda jelly having a stimulating and a refreshing feelings similar to those of a carbonated drink containing gaseous carbon dioxide is obtained. |
