The present invention relates to a blanching or cooking method and device. This method consists in successively loading fresh products on to a conveyor and in then conveying these products through at least one preheating zone (40), a conversion zone (50) in which they are sprayed with water at the cooking temperature, a cooling zone (60) in which they are sprayed with cold water and a draining zone (80), this method being characterised in that the water is sprayed and circulates continuously and successively through the cooling (60), conversion (50) and preheating (40) zones, and has a constant temperature within the conversion and cooling zones. The invention is applicable to devices for processing fresh products such as vegetables. <IMAGE>
