PURPOSE:To obtain glucuronidase, excellent in hydrolytic ability of soybean saponin and useful as a tastiness improver, etc., for foods by culturing a mold of the genus Aspergillus in the presence of a substance having a specific structure. CONSTITUTION:A mold of the genus Aspergillus is cultured in the presence of a substance having a basic structure expressed by the formula [hydroxyl group may further be linked through glycoside bond; carboxyl group is free; aglycone (R) has hydrophobicity of nearly triterpene and may be a steroidal skeleton] to induce and produce glucuronidase. Thereby, the objective glucuronidase is obtained. Furthermore, the mold of the genus Aspergillus is preferably cultured in the presence of a plant body of the family Leguminosae or its extract separated with hydrous ethanol at pH5.0-7.0. |
