Each processing stage is carried out in a sterile atmosphere in which the air is filtered and sterilised, and buffer zones which also contain sterile air are provided between succeeding stages. The pre-shaped prods. are dried using filtered and sterilised air during the pasteurising or rolling operations, and are subsequently cooled by cold sterilised air.
