摘要 Each processing stage is carried out in a sterile atmosphere in which the air is filtered and sterilised, and buffer zones which also contain sterile air are provided between succeeding stages. The pre-shaped prods. are dried using filtered and sterilised air during the pasteurising or rolling operations, and are subsequently cooled by cold sterilised air. The prods. are also weighed and dosed in a sterile atmosphere, and are packed in sterilised thermoplastic foil in a vacuum. USE/ADVANTAGE - Used in the prodn. of bread, confectionery, etc..
