PURPOSE: To obtain a dried pasta which can be rapidly reconstructed when the pasta is be consumed, by forming a mixture containing a pulverized cereal product and water into a pasta, preheating the formed pasta and drying the preheated pasta. CONSTITUTION: A mixture containing a pulverized cereal product and water is prepared and formed into a pasta. The pasta is then preheated with steam while a hot water with addition of citric acid having 5.0 to 5.5 pH is intermittently sprayed to obtain a preheated pasta having 35 to 45wt.% dry matter content. Then the preheated pasta is dried by irradiation of IR rays in a hot air drying machine at 60 to 80 deg.C to obtain the pasta of the purpose. |
