PURPOSE:To obtain the subject beta-glucooligosaccharide capable of applying to a vehicle, a food material, etc., in a high accumulation state and in a high yield by acting a specified microorganism on cellobiose, gentiobiose or a mate rial containing the said substance. CONSTITUTION:A beta-glucooligosaccharide-producing microorganism (e.g. Sterigmatomyces eliviae CBS 8119) belonging to Sterigmatomyces genus, Rhodotorula genus, Shirobasidium genus, Bullera genus, Lipomyces genus or Cryptococcus genus is acted on cellobiose, gentiobiose or a material containing the said substance and the produced beta-glucooligosaccharide is collected. The reaction for producing the beta-glucooligosaccharide from cellobiose, etc., is carried out preferably at 20-80 deg.C, pH3-7 and for 2-10 days. |
