PURPOSE:To provide powder of an edible oily material excellent in preservation stability, especially powder of a flavor oil with hardly any change and deterioration in quality of aroma and flavor. CONSTITUTION:An edible oily material is emulsified by using a film-forming agent in which sucrose esters of fatty acids having a highly decomposed dextrin with 20-50DE and >=10HLB are combined and then powdered by spray-drying, etc. Thereby, powder excellent in flavor balance and further fluidity and solubility with hardly any moisture absorption and volatilization loss of aroma during a preservation period without any change and deterioration in quality of the aroma and flavor can be obtained. |
