PURPOSE: To obtain a blend excellent in oxidation stability and useful to coat chocolate, etc., by blending non-lauric acid oil and fat for coating with liq. trans-hardened oil, having high stability in a specified ratio. CONSTITUTION: This blend contains non-lauric acid oil and fat (A) for coating contg. hardened wet-fractionated palm oil olein and/or hardened cotton seed oil and liq. trans-hardened oil (B) having high stability as an olein fraction obtd. by wet-fractionating a mixture contg. hardened soybean oil so that the weight ratio of A:B is regulated to 95:5 to 70:30. |
