PURPOSE:To provide the subject gel having a high elastic modulus and excellent transparency and useful as a food raw material, etc., by mixing a prescribed amount of a multivalent metal salt with a prescribed amount of a polysaccharide capable of being gelled by the action of the ions of the multivalent metal, and subsequently subjecting the mixture to a high pressure treatment to form the gel. CONSTITUTION:A prescribed amount of a multivalent metal salt such as a Ca or Al salt is mixed with a prescribed amount of a polysaccharide such as polyuronide, alginic acid or acidic heteroglucan, capable of being gelled by the action of the ions of the multivalent metal, and the mixture is subjected to a high pressure treatment under a pressure of >=100MPa to substantially cause a gelling reaction for forming the objective gel. |
