<p>PURPOSE:To save means for subjecting a raw material to heat denaturation, which has been required in order to make readily receive the action of alpha-amylase, to remarkably shorten liquefied time of the raw material by the action of alpha-amylase and to prevent coloration by heating the liquefied material, thus obtaining a high-quality product. CONSTITUTION:An alcohol-containing seasoning having sweetness is produced by blending crushed article of wheats or miscellaneous cereals with 60-140wt.% water in which a heat-resistant alpha-amylase is dissolved and liquefying >=95wt.% starch of the crushed article at gelatinization temperature or above in continuous stream, charging the liquefied material together with alcohol and rice koji, and saccharifying and aging the liquefied material.</p> |
