摘要 |
PURPOSE:To enable a flat easing for meat, providing pieces of meat excellent in appearance and texture after steaming treatment by facilitating wrapping thereof around the pieces of meat without losing the meat due to removal of a shape retaining net. CONSTITUTION:A flat easing polysaccharide film for meat, containing water-soluble polysaccharides such as carrageenan and polyhydric alcohols such as glycerol at (0.2-1):1 weight ratio of the polyhydric alcohols to the water-soluble polysaccharides and having <=25wt.% moisture content. |
