FAR AND OIL COMPOSITION FOR ROLL-IN

PURPOSE:To provide the subject composition which consists of a water-in-oil type emulsion comprising an oil phase containing fats and oils having specific solid fat content indexes and an aqueous phase having a sugar concentration of >= a constant value and which is used for producing pies having excellent shapes and textures. CONSTITUTION:The objective fat and oil composition for roll-in consisting of a water-in-oil type emulsion comprising an oil phase containing 30-95wt.% of fats and oils having SFI(solid fat content index) of 30-55 at 20 deg.C, 10-30 at 30 deg.C and <=5 at 40 deg.C and an aqueous phase having a sugar concentration of >=30wt.%.
