Process for concentrating, dehydrating and/or removing at least one constituent of an alimentary liquid or the like, suitable dehydrating device and corresponding dehydrated product. The process according to the invention is noteworthy in that it takes place in several stages: introduction of the liquid to be dehydrated (13) in a supply reservoir (10), placing under low pressure of the chamber (1) and of the adsorption device (2) as far as a partial air pressure of between 1 and 5 mbar, heating of the device (4) over which the liquid (13) flows, maintenance of the desired pressure, stopping of operation when the desired product is obtained and placing of the dehydrating device (2) at atmospheric pressure.
