发明名称 BULKING AGENT MADE FROM FOOD GUM
摘要 PURPOSE: To obtain a soluble and practically nondigestible extending agent for a low calorie food substituting for sucrose or other soluble monosaccharides. CONSTITUTION: This extending agent is a mixture of segmented chains of heteropolysaccharides obtd. by enzymatically depolymerizing natural heteropolysaccharides. When heterpolysaccharides contg. 1,4-β-D-bonded mannose (e.g. guar gum) are depolymerized, one or more kinds of enzymes are used. When heteropolysaccharides contg. 1,4-β-D-bonded glucose (e.g. tamarind seed gum) are depolymerized, one or more kinds of other enzymes are used. Various foods are produced using this extending agent.
