PURPOSE: To obtain a safe high purity water-soluble dye represented by a speci fied structural formula, capable of coloring a food red or yellow and emitting no offensive odor at the time of use. CONSTITUTION: This water-soluble dye is represented by the formula, wherein R1 is C5 H11 , C7 H15 , or a mixture of them, R2 is that of R2 NH2 selected from among an amino acid derived from a natural substance, alkyl ester of an amino acid having <=10C alkyl, amino-alcohol, alkyl ester of dipeptide having <=10C alkyl and 10-20C aliphatic and alicyclic (poly)amines, X is C=O or CHOH, this dye is red in the case where X is C=O and it is yellow in the case where X is CHOH. |
