发明名称 PRODUCTION OF ENZYMATICALLY DECOMPOSED SOYBEAN PROTEIN CAPABLE OF ACTIVATION OF MACROPHAGE
摘要 PURPOSE:To enable efficient production of the subject enzymatically decomposed soybean protein by acting a protease (PTE) on a soybean protein (-containing material). CONSTITUTION:Soybeans are defatted, subjected to water extraction and subsequently subjected to isoelectric point precipitation to obtain an isolated soybean protein (A) from which whey is removed. To the component (A), an aqueous solvent such as water, a buffer solution or a low-concentration alcohol-containing aqueous solution is then added in an amount of 5-20 times (W/W) the amount of (A) and the resultant mixture is sterilized at about 121 deg.C/1atm for 5-20min. pH is then adjusted to a desired value to obtain a substrate solution (B). PTE such as an alkali protease is subsequently added to the solution (B) and the resultant mixture is reacted at 25-40 deg.C for 15-30hr to obtain a reaction product (C). The component (C) is then heat treated at about 100 deg.C for deactivation of PTE and, after adjustment of its pH to a value in the vicinity of neutral pH, decomposition residues are removed by centrifugal separation, etc., thus obtaining the objective enzymatically decomposed soybean protein capable of activation of macrophage.
