PURPOSE: To provide a food such as pasta or a vegetable product such as tobacco which is restructured with a decreased amt. of a binder, and to provide a production method thereof. CONSTITUTION: A slurry comprising 0.2 to 4.0% gellan gum, food or vegetable material in a fine powder state and water is prepared and heated to 80 to 90 deg.C to dissolve the gellan gum. Then the slurry is formed and cooled.
