摘要 PURPOSE:To obtain a moderately digestible and absorbable material for foods having taste and texture similar to those of normal starch and a wide range of uses, and a method for producing the above-mentioned material. CONSTITUTION:A moderately digestible and absorbable material for foods is composed of a starchy substance and a modifier for modifying the aforementioned starchy substance. The aforementioned material is characterized by the enzymic digestibility with amylase reduced to <=95% based on that of unmodified starchy substance. Furthermore, glucides other than D-glucose and fatty acid compounds are preferred as the above-mentioned modifier.
