摘要 PURPOSE: To provide a browning compsn. which changes the skin of a dough into brown when the dough is heated in a microwave oven so that a same brown skin can be obtd. as a dough heated in a conventional oven. CONSTITUTION: A soln. of milk solid containing reducing sugar and milk protein is hydrolyzed and spray dried to obtain a browning compsn. which causes Maillard reaction to produce melanoidin. The compsn. is used by adding water and covering on the skin of a dough.
