PURPOSE: To obtain a dehydrated heated meat in a short time without requiring a binder by heating a meat in an animal fat till a specified dry matter content is obtd., then predrying the meat in an oven in partial vacuum, and granulating and dehydrating as the final process. CONSTITUTION: A meat is heated in an animal fat at about 100 to 120 deg.C under atmospheric pressure for about 40 to 120min to obtain >=60wt.% dry matter content. The fat used for heating is preferably stabilized by adding an antioxidant such as butylhydroxylanisole and octyl gallate. Then the meat is preheated in an oven in partial vacuum by using a hot plate vacuum furnace. Then the meat is granulated by using a mincer or the like and dehydrated as the final process to obtain a dehydrated heated meat. Thereby, a dehydrated heated meat can be produced without using a binder such as egg white. |
