This method consists in reducing the water content of this grape juice by dispersing it, continuously and in the form of droplets, over an exchange surface (9) located in a humidification tower (9) through which passes, at atmospheric pressure, a stream of temperate gas having a low moisture content. The device for implementing the method comprises a humidification tower consisting of a closed tubular enclosure (5) which is fitted, at one of its ends, with an inlet mouth (6) connected to a unit (15) for heating and for circulating a gas having a low moisture content, and, at its other end, with an outlet mouth (7) for the humidified gas, this tower comprising from the top down, on the one hand, at least one droplet-forming sprinkler bar (8) which is connected, via a pipe with a pressurising pump, to a tank (2) containing the processed grape juice and, on the other hand, an exchange stage (9) formed by exchange plates defining a droplet collection network, and, in addition, a vat for recovering the droplets falling in the exchange tower and which is connected, via a pipe (4) with a pump, to the tank containing the grape juice. <IMAGE>
