The invention relates to a novel liquid or paste-like yeast preparation which has a high density and which comprises approximately 1-20% by weight of the polyhydroxy compound which has been selected from propylene glycol, glycerol, non-fermentable mono- or oligosaccharides or sugar alcohols, soluble oligo- or polymeric carbohydrates and polyethylene glycol, or mixtures thereof, and fresh yeast. The high-density yeast preparation has a density which exceeds 800 g of yeast (27-29% dry material) per 1 litre of preparation, and the concentration of the polyhydroxy compound in the extracellular liquid is 5-50% (weight/volume). The preparation has an improved ability to retain its activity and can readily be metered and can be uniformly suspended and tolerates repeated freezing and thawing. The viscosity of the high-density liquid yeast preparation is less than 200 (cP) at 20 degree C. The invention also relates to processes for preparing the yeast preparation and to its use for preparing baking yeast, brewing yeast, distillery yeast and wine yeast of improved quality.
