Three-phase systems of three mutually unmiscible liquid phases separated by phase boundary surfaces and containing a water-insoluble oil which is liquid at normal temperature (25 DEG C), a special emulsifier, and water are stable over a wide range of temperatures and emulsifier concentrations. Such three-phase systems are suitable for cosmetic and pharmaceutical formulations and tertiary petroleum recovery.
