PURPOSE:To accomplish the title analysis in a simple fashion in high accuracy by determining the whole glucose level in starch, etc., and the glucose level produced after reduction using a specific equipment and also by operating average molecular weight, etc. CONSTITUTION:The objective analytical equipment A made up of (1) a sample injector 3, (2) a receiving piping 4, (3) a liquid feed pump 2, (4) a cell for determination with an enzyme-immobilized enzymatic electrode 7 for determining glucose, an anti-reference electrode 8 and an antielectrode 9 housed therein, (5) a potentiostat 11, (6) a current value A/D converter, and (7) a computer, etc. Starch, etc., B is fed to the equipment A to determine free glucose level Gf, the whole glucose level before reduction Gt, and the glucose level Gr produced by hydrolysis after reduction. Thence, from the measurements, the average molecular weight Ma of the starch, the average chain length Dp, and the DE value (Dextrose Equivalent Value) are calculated using formula I, formula II, and formulas III and IV, respectively. |
