<p>The method comprises an initial step of extracting calcium phosphocaseinate by acidifying milk (2) in a three-compartment electrodialysis apparatus (1) up to a pH value of 5, which is slightly higher than that of the isoelectric point of casein, and at least partially separating out (4) the casein and lactoserum by whizzing the acidic milk of pH value 5 from the electrodialysis apparatus.</p> |
