PURPOSE: To obtain a food compsn. contg. efficiently producibe O-α-D- glucopyranoside-D-fructose having high solubility in water, non-cariogenicity and ensuring slow absorption from the small intestine as a sweetener. CONSTITUTION: A food is blended with 1-O-α-D-glucopyranoside-D-fructose as a sweetener to obtain a sweetened food compsn. The compd. is preferably obtd. by treating a 20-55wt.% soln. of sucrose or isomaltulose at 30-50 deg.C with cells of Protaminobacter rubrum (CBS574, 77) or an enzymatic extract of the cells and refining the resultant product by ion exchange chromatography or other method. |
