PURPOSE:Enriched rice preventing oxidation of faty and oily ingredients in rice and and cracking phenomena of grains of rice, having good taste, obtained by adding vitamins and/or minerals to rice. CONSTITUTION:One or two or more nutrients selected from the group consisting of vitamin A, B, E, and minerals are dissolved in a solvent, e.g., ethanol, etc. to give a solution, in which polished or unpolished rice is soaked and it is impregnated with the above-mentioned ingredients. The solvent is evaporated in such a way that the rice has the same water content as that before impregnation, the rice is aged for several days, put in bags and sealed up. Consequently, the nutrients will not flow out during washing of rice with water, and the pyrolysis of the nutrients can be prevented. |
