发明名称 PREPARATION OF SMOKED FOOD
摘要 PURPOSE:To obtain a smoked food like a thin ring smoked cuttlefish at a low cost, by filling a raw material prepared by seasoning a ground fish meat to a desired taste in a mold having a core mold in the center thereof, and processing the resultant cylinderical material. CONSTITUTION:A ground fish meat is kneaded with a seasoning and starch throughly and preferably a raw flesh or extract of a natural cuttlefish, and the resultant raw material is injected from raw material feed inlets 3 of a mold 100 having molding cavity 5 with a core 2 which is a core mold along the central axis in the center thereof. The air in a volume of just the raw material injected thereinto in the molding cavity 5 is expelled from air vent holes 4 to the outside. The resultant cylindrical molded material 6 is then kept as it is at a low temperature for usually 24hr or longer. The core 2 and outer molds 1 and 1' are removed and the molded material 6 is dried at 60 deg.C or below or steamed and smoked at 30-80 deg.C for 2-6hr. The cylindrical material 6 thus obrained is then sliced into a thin piece which is a smoked food product like a ring smoked cuttlefish.
