The invention is concerned with a wet-fractionation process in order to recover an olein and a stearin fraction from a selected soya bean oil containing at least 30% saturated fatty acid residues. Part of the invention is also a blend of the stearin fraction, obtainable by the process, and a palm mid-fraction and/or cocoa butter. |
