METHOD FOR SYNTHESIS OF MONO-OR DI-GLYCERIDE

A method for a selective synthesis of mono- or di-glyceride comprises (a) adsorbing lipase in liposome soln., (b) forming reverse micelle by using the fixed lipase, (c) controlling the water content in the glycerol and the flow rate of the substrate, and (d) inducing an ester exchange reaction (glycerolysis reaction). Pref. the substrate is olive oil. Mono- and Di-glycerides are useful as a high quality emulsifying agent.
