PURPOSE:To obtain a readily edible processed food having appearance without any image of bean-curd refuse by using the bean-curd refuse as a main raw material, dispersing and mixing fine denatured egg yolk with the bean-curd refuse and wrapping the resultant mixture in a coating-like edible material. CONSTITUTION:A processed bean-curd refuse food is obtained by sufficiently mixing 50-95% bean-curd refuse in a wet state with 2-15% raw egg yolk liquid and further seasonings such as 5-30% sugar, 3-15% edible vinegar and 1-5% common salt, as desired, heat-treating the resultant mixture and wrapping the prepared mixture in a coating-like edible material such as the coating of a bean-jam bun, heating the wrapped mixture in a steamer, etc., and carrying out pregelatinization of starchy substances and denaturation and coagulation of egg yolk. |
