PURPOSE:To obtain cakes and foods subjected to surface treatment free from deterioration in taste by simple operation, capable of being readily coated even in unevenness of surface by attaching dried powder comprising a flavoring substance, fats and oils and a saccharide prepared by a specific method to the surface of cakes and foods having the surface wetted with fats and oils. CONSTITUTION:Cacao mass, coffee, essence of tea (including powder), milk (including powder), egg yolk (including powder or whole egg) alone or a mixture thereof, fats and oils having >= about 25 deg.C melting point and a saccharide are made into an oil-in-water type emulsion, dehydrated and dried to give powder. The powder is applied to the surface of cakes and foods having the surface made in a wet state by frying with fats and oils, coating with fats and oils or other methods. |
