CONSTITUTION:Milled buckwheat flour is finely pulverized with a fine-pulverizer to a size of about 10-50mum and mixed with a sugar such as granulated sugar. The mixed buckwheat flour is kneaded with an aqueous solution of cyclodextrin having a concentration of 2-5% to effect the bonding of the finely pulverized particles with each other. The product is granulated in a porous form by a fluidized granulation process, etc., to obtain the objective buckwheat flour.
