<p>PURPOSE:To rapidly produce a liquor having stable flavor and taste by subjecting a sterilized raw material solution to the first fermentation process under a specific condition to consume a specific amount or more of free amino acids in the solution, and subsequently subjecting the product to the second fermentation process under an anaerobic condition. CONSTITUTION:A sterilized raw material solution is subjected to the first fermentation process in the presence of free yeast under an aerobic condition at a dilution rate of 0.01-0.1/h in the first fermentation region to consume 50% or more of free amino acids in the raw material solution. The product is subjected to the second fermentation process in the coexistence of the free yeast and immobilized yeast under an aerobic condition in the second fermentation region to obtain a liquor.</p> |
