Every second item (1,1,1...) is turned through an arc of 90 deg. by an element which extends over the conveyor from one side, and the remaining items (2,2,2...) are similarly turned by a second element on the other side of the conveyor. Pref. turntable (4, 5) with hinged projections (6) is on sides of the conveyor (3). These turntables are rotated in opposite directions. The hinged projections (6) are spring-loaded and are raised and lowered by a stationary cam. Their location corresp. to the angle between the sides of the triangular dough items handled. Each hinged projection operates together with a fixed projection, the dough items held between a hinged projection on one side and a fixed projection on the other. A control system can vary the relative speeds on the conveyor and the turntables. USE/ADVANTAGE - Internal stress in the items, due to stretching of the dough, is orientated in the direction of rolling of the items into e.g. croissants, to avoid distortion of the items during baking.
