<p>PURPOSE:To culture the Aspergillus while the growth of the Aspergillus and the generation of water are uniformed by placing a culture raw material in a specific region of a koji (malted rice) supporter in a thick layer state in the early time of the culture of the Aspergillus, starting the culture and suitably controlling the temperature and humidity of the chamber with the progress of the culture of the Aspergillus. CONSTITUTION:In the early time of the culture of the Aspergillus, a koji raw material is placed in a specific region of a koji-supporter 3 in a thick layer state, and the culture is started. As the culture of the Aspergillus proceeds, the koji raw material is turned over and stepwisely spread on the supporter, while the temperature and humidity of the chamber are controlled with a dehumidifying means. The koji raw material is stepwisely spread into a thin layer on the supporter and cultured, while the growth of the Aspergillus and the generation of water are uniformed in each step.</p> |
