A method for extracting curcumin in Curcuma longa L. comprises (a) dissolving the whole extracts in a water content polar solvent, (b) adding excess amount of a non-polar solvent, agitating and leaving it to obtain a precipitate, and (c) recrystallyzing the ppte. from ethanol, methanol, acetone or a mixt. solvent of them. The water content polar solvent is 85-100 % methanol, 80-95 % ethanol or 75-90 % acetone. And the non-polar solvent is n-hexane or petroleum ether (b.p. 40-60 deg.C).
