Method for obtaining an improved yield of a coffee extract, characterised in that it comprises the following operations which consist in: (1) pretreating an aqueous mixture of ground roasted coffee with steam in a closed pressurised container at a temperature exceeding 200 DEG C; (2) maintaining the said temperature and pressure over a prolonged period of time; (3) rapidly returning the contents of the said container to atmospheric temperature and pressure; and (4) treating the mash (pulp) obtained in accordance with operation (3) with a hydrolytic enzyme or with a mixture of hydrolytic enzymes to enable the desired product to be obtained.
