NEW MATERIAL:A yeast having a function capable of continuing the generation of carbon dioxide gas at a rate of >=12ml/5min over 70-240 pts.wt. after starting the measuring by a fermentation force measuring method of Yeast Industry Association. EXAMPLE:Saccharomyces cerevisiae AN-140 (FERM P-11847). USE:Production of bread. PREPARATION:Separation sample (1g) of soil, flowering plant, etc., is suspended in 9ml sterilized physiological saline and 0.1ml thereof is inoculated to a barley extract-added plate and the sample is pre-cultured at 30 deg.C for 2-3 days, and then the proliferated yeast cells are further cultured at 30 deg.C for 24hr, subjected to centrifugal separation and filtered. The resultant viable yeast cells are subjected to a primary selection by Meissel method and a secondary selection by CO2 generation pattern using a pharmograph. The resultant tertiary yeast strain to be examined is cultured by a minijar fermenter and examined according to a dough fermentation force and bread-making evaluation measuring method of Yeast Industry Association. |
