The invention relates to a process for monitoring temperatures in wine making. A heating or refrigerating fluid is circulated in heat exchangers situated inside or within the walls of the vats; the temperature of each vat (10) is monitored with the aid of a microprocessor (17) linked to a probe (12) and controlling a valve (15) situated on the fluid inlet piping (13); with the aid of a microcomputer (20), information contained in the microprocessors (17) is collected; it is stored in a memory (21) as is the time at which it was collected; each microprocessor (17) is assigned limit safety temperatures; for each of the microprocessors (17), the temperature measured inside the vat (10) is compared periodically with the limit safety temperatures. <IMAGE>
