Procedure for manufacturing a vitamin C composition having enhanced therapeutic activity. It involves dissolving ascorbic acid in water, reacting the solution obtained with a non-toxic metal carbonate compound in order to form the corresponding metal ascorbate, heating the reaction mixture until at least part of the reagents are converted into at least one aldonic compound selected from L-threonic, L-xylonic and L-lyxonic acid, and the non-toxic edible salts thereof, aldono-lactones and aldono-lactides, and separating from said reaction mixture a solid product which comprises said metal ascorbate and said aldonic compound. The compositions obtained are useful for treating scurvy and inflammatory diseases.
