A method for manufacturing filled cheeses, comprising the operations of: filling with small pieces of curd (C) a permeable mould (1) corresponding at its bottom to the outer form desired for the final product, and arranged in which is at least one hollow element (3) corresponding to the shape of the part of the cheese mass (F) which it is desired to replace with a filling (R); leaving the curd (C) in the mould until it is dehydrated, losing the whey content to the point where the cheese has taken on a suitable consistency; inserting into the hollow element (3) the filling (R) which it is desired to introduce into the cheese; drawing out of the cheese mass (F) the hollow element (3) so that the filling (R) stays in the cavity thus left in the cheese; and finally extracting the cheese from the permeable mould (1). This method may be carried out manually or be mechanised. Other subjects of the invention are the device having the structure corresponding to the method described, and the filled cheese resulting from the use of this method. <IMAGE> |
