PURPOSE:To obtain a formed article of egg-containing smoked salmon by properly blending minced salmon with egg, starch, seasoning, etc., forming the blend into a viscous formed article and steaming, drying and smoking the formed article. CONSTITUTION:Minced salmon is properly blended and kneaded with egg, sugar, starch, fish meat and seasoning, etc., and solid egg is put therein and rolled into a rod-like shape by a SUNOKO (like a bamboo blind) and steamed, dried and smoked to provide the egg-containing smoked formed salmon. Specifically, (1) salmon is cut into three piece and sprinkled a little with sake wine. (2) The material obtained according to (1) is mixed by a mixer. (3) Egg is put in the material obtained according to (2) and sugar, salt, white meat fish, starch, seasoning, etc., are properly put therein and these ingredients are blended. (4) Solid egg is put in the viscous blend obtained according to (3) and formed into rod-like shape. (5) The above-mentioned formed article is steamed, dried and smoked. The resultant formed article has taste capable of giving proper touch feeling of tooth in biting and matched with faint aroma of spice and faint sweetness and flavor of smoked product and different from meat. |
