The invention concerns a method of obtaining milk proteins for extrusion by means of pasteurisation, cooling, coagulation, rinsing of coagulate, pressing, reducing, drying, characterised in that raw skimmed milk prior pasteurisation is buffered by means of organic, inorganic acids or by means of an addition of leaven of acidification bacteria until obtaining active acidity between pH 5.8 and pH 6.2, in order to decrease content of limestone bounded with protein to 0.2-0.6 minimole/litre, preferably 0.4, and following acidification the milk is cooled to 4-10 degrees C and stored for 10-20 hours, then the milk is subject to ultra filtration until obtaining 200-700 mg of limestone in 100 grams of concentrate to obtain 2-4-fold concentration of proteins and mineral salts bounded with proteins, which is followed by pasteurisation, cooling, coagulation, rinsing of coagulate, pressing, reducing and drying.
