PURPOSE:To obtain noodles kneaded with hands having excellent glutinousness, strength, etc., good compatibility with soup and good palatability by pressing lump of noodles, loosening and rotating and repeating these operations. CONSTITUTION:A latch 20 slidably inserted into a guide pipe 21 is made into a projecting state, a supporting piece 5 of a container 1 is held from below and the container 1 is retained in a horizontal state. Then, a noodle ball 2 is fed from a noodle ball supply pipe 30 to the container 1, an air-pressure cylinder 44 is worked to drop a pressing plate 40, the noodle ball 2 is pressed under proper pressure and irregular unevenness is formed on the surface of the noodle ball 2 by round bars 42 on the under surface of the pressing plate 40. Then, the pressing plate 40 is raised, the air-pressure cylinder 52 is worked to drop a fork 50, the noodle ball 2 is thrust with the fork 50, the noodle ball 2 is slantingly raised while being rotated and then the fork 50 is pulled out. The above-mentioned operations are repeated, the latch 20 is moved backward, the container 1 is rotated downward, the noodle ball 2 is discharged and sent to the following process. |
